I’m devoting an entire post to butter. Blogging is the best thing ever.

As an accompaniment to our spaghetti in meat sauce dinner, Greg, Mom, Kevin and I spread sweet and salty roasted garlic butter on thick slices of warm Italian bread.

Roasted Garlic Whipped Butter

Preheat the oven to 350 degrees.

Trim about half an inch from the top of a head of garlic, drizzle it with a bit of olive oil, and wrap it in foil.

Roast the garlic until the cloves are soft and golden brown (about an hour). Then squeeze the flesh into the food processor and add a stick of softened butter, a teaspoon of lemon juice, and ¼ teaspoon of salt.

Whip the mixture together until it’s light and fluffy.
