Salami, Provolone, and Baby Spinach Grilled Cheese Sandwich

In honor of National Grilled Cheese Month, I’m posting a different grilled cheese sandwich every single day through the month of April. You’re welcome.

Apparently, there’s a spot. Just one. A SINGLE spot. And this sandwich? This one hits it. If there is such a thing as the spot, well then this sandwich HITS THE SPOT.

It’s incredibly savory. The rye bread crisps up to a perfect golden brown, the caraway seeds get super fragrant, the salami is spicy and salty, and the provolone provides the much-needed – the beloved – goo.

If I’m being perfectly honest, I couldn’t really taste the spinach, but I was happy enough for the iron boost. Also, the salami (when heated) can be a little oily. I blotted it with a paper towel and that did the trick.

Candied Dijon Bacon Grilled Cheese with Pickled Jalapenos

In honor of National Grilled Cheese Month, I’m posting a different grilled cheese sandwich every single day through the month of April. You’re welcome.

Oh my god I’m full. My hair is full. My eyelashes are full.

It’s probably best to share this one with a friend – one whom you love VERY, VERY MUCH – because it’s quite rich. Don’t get me wrong, it’s magically delicious, but it’s really heavy.

Expect an explosion of flavors – spicy, sweet, salty, tangy, with a tiny bit of char on the tips of the bacon.

I originally planned to use cheddar rather than provolone, and it was a good thing I didn’t. There’s SO much flavor in the other ingredients. An assertive cheese might’ve been too much.

The brown sugar and Dijon melts a bit into the cheese, creating a delightfully sticky, messy sauce.

I’m only sharing this sandwich with you because I love you.

Sausage and Waffles Grilled Cheese Sandwich

In honor of National Grilled Cheese Month, I’m posting a different grilled cheese sandwich every single day through the month of April. You’re welcome.

This sandwich was a great idea. I mean, who doesn’t love breakfast for dinner? Sausage links and waffles with maple syrup – this sandwich had everything going for it. Until I actually made it.

It turned out, um, odd. The combination of syrup and cream cheese tasted weird, almost curdled. And the waffles never crisped up – they got a little soggy. Based on this experiment, I think I’m going to abandon the chicken and waffles grilled cheese sandwich idea. Sorry, the South.

This lovely grilled cheese brings together some of my very favorite flavors. The creamy brie is like cheese-flavored butter, and the balance of sweet apricot preserves and salty ham is flawless.

Bacon-Roasted Garlic and Sun-Dried Tomato Grilled Cheese Sandwich

Congratulate me, Friends: I created a grilled cheese and serendipity sandwich.

One very special day, I’d had bacon for breakfast, which left me with a couple tablespoons of liquid gold, i.e. rendered bacon fat. I decided to re-purpose that fat to roast a couple cloves of garlic. After roasting the garlic, I was left with garlic-infused bacon fat, so, really, what choice did I have but to re-re-purpose it to grill my sandwich.

And oh, what a remarkable, ridiculous sandwich it was. It tasted like a bright, fresh caprese salad got loaded on tequila and cheese fries, and woke up in a strange apartment, unsure of just who was posting true confessions on her Facebook wall all night long. It was delicious, and a little embarrassing.

Bacon-Roasted Garlic and Sun-Dried Tomato Grilled Cheese Sandwich

It tastes like a bright, fresh caprese salad got loaded on tequila and cheese fries, and woke up in a strange apartment, unsure of just who was posting true confessions on her Facebook wall all night long. It’s delicious, and a little embarrassing.
Ingredients
  • 2 cloves garlic
  • 2 tablespoons rendered bacon grease
  • 2 slices challah bread
  • Italian 4-cheese blend
  • Sun-dried tomatoes, cut in short strips
  • Basil, chopped
Instructions
  1. Preheat oven to 300 degrees.
  2. Remove two cloves from a head of garlic, but do not peel off the papery skin. Place the cloves on a small square of foil and drizzle on about a tablespoon of bacon fat. Wrap the cloves tightly in foil, and roast for 25 minutes, until the garlic is squishy.
  3. Reserve the garlic-infused bacon fat.
  4. Remove the garlic cloves from the peel and spread onto one slice of the challah.
  5. Top the garlic with shredded cheese, sun-dried tomatoes, and basil.
  6. Close up the sandwich, and brush the outsides of the bread with the reserved garlicky bacon fat.
  7. Griddle on medium-high heat until the cheese is melted and the bread is golden brown.

 

Chili Cheese Dog Grilled Cheese Sandwich

Y’know what? I’m concerned. I’m concerned about this whole series of sandwiches. It’s only been a week and a half in a 30-day series — this is sandwich number ten — and I’m concerned that if I keep gushing about my grilled cheeses, eventually I’ll be like the boy who cried, “sandwich!” and no one will believe me.


But, oh! Oh, this sandwich. This silly sandwich will take you out to the ballgame and back again. It’s a perfect marriage of a squishy, meaty chili cheese dog and a crunchy, gooey, soul-satisfying grilled cheese.


I didn’t really want a big pot of chili around in the middle of an uncharacteristically warm Minnesota week, so I used a (gasp!) can of no-bean chili. The sandwich was ridiculous and delicious, and incredibly messy. When you eat this one, I suggest wearing a bathing suit and sitting on a sheet of plastic.

Chili Cheese Dog Grilled Cheese Sandwich

Ingredients
  • 2 slices white bread
  • Butter
  • 2 slices American cheese
  • 2 hot dogs, sliced lengthwise
  • No-bean chili
Instructions
  1. Top each slice of bread with American cheese. Add hot dogs and chili to one half of the sandwich.
  2. Close it up and butter the outsides of the bread.
  3. Griddle on medium-high heat until the cheese is melted and the bread is golden brown.

 

Jalapeno Popper Grilled Cheese Sandwich

This sandwich tastes just like a jalapeno popper should — spicy, smoky, tangy, fried. CRONCH through the buttery toast like crispy breading on the outside, into the creamy filling, with meaty bacon, gooey cheddar, and bright, acidic pops of pickled jalapenos. And then have a beer.

Jalapeno Popper Grilled Cheese Sandwich
Recipe Type: Sandwich

  • 1 ounce cream cheese
  • 1 teaspoon green onions, chopped
  • 5 slices pickled jalapeno, chopped
Instructions
  1. Combine cream cheese, green onions, and jalapenos in small bowl. Mix until smooth.
  2. Top each slice of bread with cheddar cheese.
  3. Spread cheese mixture on one slice of cheddar.
  4. Top with bacon.
  5. Close it up and butter the outsides of the bread.
  6. Griddle on medium-high heat until the cheese is melted and the bread is golden brown.
