Caramelized Onion dip

Silky sour cream and Neufchatel are gently folded with sweet caramelized onions in a thick and creamy, sweet and salty, retro-tastic appetizer.
Ingredients
  • 4 tablespoons butter
  • 1/4 cup vegetable oil
  • 3 cups slivered onions
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon kosher salt
  • 1/4 teaspoon white pepper
  • 4 ounces light cream cheese (Neufchatel), room temperature
  • 1/2 cup light sour cream
  • 1/2 cup light mayonnaise
  • 1 teaspoon onion powder
Instructions
  1. Heat the butter and oil in a large skillet over medium heat.
  2. Add the onions, cayenne, salt, and pepper and sauté for about 10 minutes.
  3. Reduce the heat to low and cook, stirring occasionally, for 45 minutes to an hour, or until the onions are browned and caramelized.
  4. Pull the onions out of the pan with a slotted spoon and allow them to cool. (Use the onion-infused oil for something fabulous.)
  5. Beat the cream cheese, sour cream and mayonnaise until smooth. Fold in the onions and onion powder; mix well. Season to taste.
