Silky sour cream and Neufchatel are gently folded with sweet caramelized onions in a thick and creamy, sweet and salty, retro-tastic appetizer.
Ingredients
- 4 tablespoons butter
- 1/4 cup vegetable oil
- 3 cups slivered onions
- 1/4 teaspoon cayenne pepper
- 1 teaspoon kosher salt
- 1/4 teaspoon white pepper
- 4 ounces light cream cheese (Neufchatel), room temperature
- 1/2 cup light sour cream
- 1/2 cup light mayonnaise
- 1 teaspoon onion powder
Instructions
- Heat the butter and oil in a large skillet over medium heat.
- Add the onions, cayenne, salt, and pepper and sauté for about 10 minutes.
- Reduce the heat to low and cook, stirring occasionally, for 45 minutes to an hour, or until the onions are browned and caramelized.
- Pull the onions out of the pan with a slotted spoon and allow them to cool. (Use the onion-infused oil for something fabulous.)
- Beat the cream cheese, sour cream and mayonnaise until smooth. Fold in the onions and onion powder; mix well. Season to taste.
